Mini Quiche by Clutch Bodyshop

This mini quiche is a great way to quickly get some protein and some greens to last you until snack time. The recipe here is quick enough to make before heading out the door for your busy day.
Ingredients:

Vegetable cooking spray

½ cup chopped onion

2 cups fresh spinach

2 eggs

½ teaspoon olive oil

Salt and pepper, to taste, if desired

Directions:

Makes 1 serving

1.     Preheat the oven to 350 degrees F.

2.     Spray a small skillet with vegetable cooking spray. Sauté the spinach
and onion over medium heat until just tender. Remove the vegetables to a
small plate.

3.     Whisk the eggs in a bowl with the olive oil. Season with salt and
pepper to taste. Add the vegetable mixture and mix well.

4.     Spray a small ramekin with cooking spray. Pour the egg and vegetable
mixture into ramekin. Bake for 20 minutes, or until the “quiche” is set.
